Twenty-five years ago, on our family farm, we made a conscious decision to revive tradition in our own distinctive way. We planted our first olive grove and laid the foundations for a new chapter of olive growing within our family.

Our deep affinity for nature and commitment to sustainable farming naturally guided us toward an organic approach — one continuously refined by an unwavering pursuit of excellence and superior quality.

Over time, our groves have expanded, predominantly cultivated with the indigenous Istrian variety Istrska Belica, complemented by the elegant Leccino. Today, our olives reflect not only the character of the land, but also a legacy rooted in respect, dedication, and craftsmanship.

Istrska Belica is the reigning queen of olive varieties in Slovenian Istria. When you hold a single-varietal oil crafted exclusively from this cultivar, you are experiencing one of the most distinctive and intense olive oils the Mediterranean has to offer.

Renowned for its bold personality, Istrska Belica does not whisper — it speaks with clarity and strength. This is not an oil of subtlety, but of character, created for those who appreciate decisive, expressive flavors.

Its aroma is vibrant and fresh, evoking freshly cut grass, crisp green apples, and even hints of tomato leaves. On the palate, it reveals a pleasant yet pronounced bitterness, followed by a distinctive peppery finish — a hallmark of its exceptionally high content of natural antioxidants.

Although the variety originates from Tuscany, it has adapted exceptionally well to our terroir, producing an oil that has become synonymous with elegance and harmony.

Leccino is celebrated for its gentleness and balance. It is the ideal choice for those who prefer refinement over intensity and shy away from pronounced bitterness.

Delicate, subtly sweet notes of fresh olive fruit take the lead, often accompanied by nuanced aromas of almond, hazelnut, and even a touch of citrus. Both bitterness and pungency are present, yet they remain soft and fleeting, creating a beautifully rounded sensory experience.

This is an oil that does not bite — it caresses the palate with grace and sophistication.

Our Cuvée is a masterful blend of twelve distinct olive varieties: Istrska Belica, Leccino, Cipressino, Leccione, Frantoio, Pendolino, Moraiolo, Črnica, Grignan, Maurino, Rošinjola, and Buga.

Each harvest unveils a unique symphony of these cultivars — shaped by the individual characteristics of every variety, from their ripening rhythms to the yield each tree offers in a given year. This natural variability ensures that no two vintages are ever quite the same. The synergy of indigenous and internationally renowned varieties unites the strength of Istria with the elegance of Italy in a harmonious expression of terroir.

You can expect a medium-intensity oil with remarkable balance. On first contact, it reveals a smooth, almost sweet impression on the palate, gradually unfolding into a fuller body with subtle notes of nuts and green tomato. The experience concludes with a refined touch of peppery warmth and gentle bitterness — never overpowering, but perfectly poised to leave the palate cleansed and beautifully composed.

ranina

Ranina is our most prestigious expression — an olive oil that stands in a category of its own. Harvested early in September from fully green Istrska Belica olives, its aromatic profile is exceptionally focused, vibrant, and penetrating.

Ranina does not follow the typical fruity path. Instead, it delivers an assertively green and strikingly fresh character. Dominant notes of freshly cut grass, olive leaves, and artichoke define its bouquet. On the palate, a powerful and noble bitterness intertwines with an intensely pronounced, long-lasting peppery finish.

Early harvesting inevitably yields smaller quantities, yet it preserves an extraordinary concentration of beneficial natural compounds. For this reason, Ranina surpasses the rest of our collection in both complexity and potency — representing an entirely different tier of olive oil.

These distinctions were already recognized in Ancient Rome. Oils of this kind were known as Oleum aestivum or Oleum ex albis ulivis, valued primarily for medicinal and cosmetic purposes. Today, we also celebrate their remarkable culinary potential. When used with care and precision, Ranina becomes a refined finishing touch — a few drops over exceptional ingredients are enough to transform the very character of a dish.
